Baked Avocado Fries. 

Yep, I went there. I made the most delicious, buttery veggie even better! These are really addictive, and so delicious. It's not even funny. I first saw this recipe [the deep fried version] on Circle B Kitchen. If you want to check out her recipe, here it is.  Here is what mine looked like:

Before I go into the method for cooking these bad boys, I forgot to post pictures of the cutest little man in the world. He got a bath in my kitchen sink last week :)

Rider Matz! My best friend, Betsy, just had this guy a few months ago. He is so sweet and cuddly...I could just eat him up!

 

Ok now, on to the avocado fries!

Slice 'em up!

Start with the flour, then the egg, and lastly, the panko. Place the fries on a drying rack and then on a cookie sheet.

I sprayed these with olive oil (non-stick spray would also work), so they would brown evenly. After about 20 minutes at 450 degrees and a sprinkling of parmesan, they looked like this:

They were out-of-this-world crunchy, and so soft and buttery on the inside.

**Update 5/2012: Cooking avocado definitely changes the taste of it! This will not taste like fresh avocado, it's much more mellow, so remember to season it liberally. It's great to dip in a mixture of sour cream, lime juice, and chipotle in adobo (the sauce only). It really kicks it up a notch!

Dinner last night was a vegetarian feast! Seared tofu with pineapple-chipotle BBQ sauce, asian-style green beans with almonds, and some yummy avocado fries.

I know I say this all the time, but you can eat so much better at home if you just make the effort- trust me.

BAKED AVOCADO FRIES

1/4 cup flour
1 tsp kosher salt
2 large eggs, beaten
1 1/4 cups panko (Japanese bread crumbs)
2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges

Grated parmesan for serving (optional)

 

Preheat oven to 450.

Coat avocado slices in the four, then egg, then panko. Spread on a cooling rack that has been sprayed with non-stick spray, then place on a cookie sheet.  Spray the top of the wedges with olive oil and sprinkle with salt, then bake for about 20 minutes at 450, or until they are golden brown (I turned my oven up to 500 for the last 5 minutes).

Hi,

I want to make this SO BAD!! I was wondering you know of an alternative for using eggs. I have a lot of vegan friends and I think that it would be awesome to make this dish for house parties! I just need an alternative for the panko to stick to the avocado. Do you think melted vegan butter would work? Any insight is appreciated!!

I thought this was for baked avocado...very disappointed with it being fried and not baked...possibly changing the title to fried avocado would be less misleading. I will not be trying your recipe as it sounds really greeeeasy. and I dont like babies. especially sink babies. my brother used to pee in the bathtub and i can only imagine what happened in your kitchen sink...good luck with that.

Love this and I love the baby in the sink. I hope it pees everywhere!!! I bet Sassy was never bathed in a sink but was hosed down in the front yard cuz she is so nasty!

Caitrin,
2 tsp baking soda, 2 tbsp water and 1 tbsp oil mixed together is equivalent to 1 egg. I use it for baking. I'm going to try it with this recipe tomorrow.

Sorry for my late responding everyone! I have been at home with my newborn. Sassy, whew. Very passionate lady :)
Thanks for the info Lindsay! I have only used flax eggs for baking, so that was really helpful.
I definitely think that seasoning the panko would help kick up the flavor. I'm gonna try these again with cumin and chipotle.....I think that'll be a nice twist!
